FRUIT
Grown in the deep gravel and red loam of the high country
of the valley, the fruit was picked from low cropping vines
that developed intense colour and varietal flavours.
WINE MAKING
This wine was subjected to a balanced combination of both
Cold and Long Skin Maceration. The two components were run-off
separately into barrels to finish Alcoholic & Malolactic Fermentation.
The wines then remained on lees for a further six months to generate
charred and earthy characters.
ASSESSMENT
Colour: Deep garnet red with purple edges
Nose: Strong Vanilla scented oak, plummy fruit with Earthy/ Liquorice
complexity
Palate: Wild berry, spice and bramble like flavours
Recommended Cuisine: Rillettes, rib-eye Beef on the bone, Duck,
Venison, rare Kangaroo, matured cheddars, blue cheeses and very
dark chocolate!
